Cut the lean meat into thin strips and mix with salt, MSG, ground Sichuan peppercorn, and 1 egg white.

Add some oil and mix well.
Slice the cucumber, carrot, green onion, and Chinese celery into strips.

Brush oil on both sides of the dumpling wrappers.
Roll out the dumpling wrappers into large discs.
Once the water is boiling and steam starts rising, steam the rolled out dumpling wrappers for 6 minutes.
Tips:
Fill the pot with water, place the steaming tray, moisten the steamer cloth with water, wring it until it's semi-dry, lay it on the steaming tray, evenly place the dumpling wrappers on top, and then steam in the pot.
Remove the dumpling wrappers and separate them while still hot.
Next, prepare the sauce by mixing sweet bean sauce, sugar, and cornstarch in a bowl.
Tips:
Avoid adding too much sweet bean sauce to prevent it from being too salty. Adding sugar helps balance the salty flavor of the sweet bean sauce and adds depth to the flavor.
Dilute with an appropriate amount of water.
Heat a skillet, add some oil, and slide the meat strips into the skillet.
Tips:
The oil temperature should not exceed 120 degrees Celsius, and the meat strips should not be fried for more than 30 seconds. This helps keep the meat strips tender.
Stir-fry the meat strips until they change color but are still slightly undercooked.
Add the sweet bean sauce and stir-fry evenly.
