- 1 whole black chicken, cut into small pieces
DIRECTIONS
Prepare the Chicken:
Cut the black chicken into small pieces.
Slice the ginger into thick pieces.
Blanch the Chicken:
Fill a large pot halfway with warm water.
Add the chicken pieces to the pot.
Bring the water to a boil and cook until the chicken is just cooked through.
Skim off any foam that forms on the surface.
Remove the chicken pieces and rinse them under cold water.
Simmer the Soup:
Transfer the chicken pieces to a large pot or sand pot.
Add the red dates, ginger slices, dried longan, and goji berries.
Fill the pot with water, enough to cover all the ingredients.
Bring the water to a boil over high heat.
Once boiling, reduce to a low simmer and cook for about 3 hours.
Season and Serve:
After 3 hours, add 2 teaspoons of salt.
