Chicken stewed with mushrooms is a highly authentic Chinese dish, primarily made by simmering chicken and mushrooms together. It boasts rich flavors, with the broth absorbing the essence of both the chicken and dried shiitake mushrooms, resulting in a deliciously savory taste. Paired with rice, it's truly delightful. Today, I'll share the authentic recipe for this dish.

INGREDIENTS
- Half a free-range chicken, approximately 1000g (since my family is small).
DIRECTIONS
Prepare Ingredients: 100g dried porcini mushrooms, 30g dried shiitake mushrooms, 1000g half a free-range chicken.
Tip:
Since my family is small, I use half a chicken. If your family is larger, consider using a whole chicken.
Lift the chicken and scorch it over the fire to remove the surface fuzz.
Tip:
This step effectively removes any small feathers that might not have been completely plucked, ensuring the chicken is cleaner.
Chop the chicken into small pieces on a cutting board and place them in a basin.
Add enough water to the basin, soak for 2 hours to remove blood. Change the water several times during soaking.
Meanwhile, wash 100g dried porcini mushrooms and 30g dried shiitake mushrooms thoroughly, then soak them in clean water for about 1.5 hours.
Prepare the spices: 1g star anise, 1g Sichuan peppercorns, 5 bay leaves, 0.5g cinnamon, 4 slices of ginger, 5g spring onion.
Heat oil in a pan, add 5g rock sugar to caramelize. When caramelizing the sugar, use medium-low heat to prevent burning.
The rock sugar should turn into a caramel color, like in the picture.
Drain the soaked chicken and add it to the pot, stir-frying evenly.
Tip:
Wait until the chicken has soaked for enough time, about 2 hours, before starting to stir-fry.
Stir-fry with the prepared seasonings for 2 minutes.
Add 3 tablespoons of soy sauce, stir-fry evenly.
Squeeze out excess water from the soaked porcini mushrooms and shiitake mushrooms, then add them to the pot and stir-fry evenly.
Add 2g of ground black pepper and 2 tablespoons of cooking wine, stir-fry evenly.
Add enough water from soaking the porcini mushrooms and shiitake mushrooms to cover the ingredients evenly.
Bring to a boil over high heat, then reduce to low heat, cover, and simmer for 60 minutes. Add salt, stir-fry evenly, and increase heat to reduce the sauce.
