Chinese Garlic Green Beans
Garlic green beans are a simple and delicious home-cooked dish, beloved for their fresh and crisp texture as well as their rich garlic aroma. Prepare the ingredients. Get the green beans, minced meat, and seasonings ready.
Wash the green beans thoroughly, remove the strings from both ends, and then break them into 5-6 centimeter segments.
Tip:
Make sure to drain the washed green beans completely to prevent oil splattering during stir-frying.
Smash the garlic cloves with the flat side of a knife and then finely chop them into minced garlic.
Pour a moderate amount of cooking oil into the pan and heat until it reaches about 60% hot. Add the green beans and fry until they become tender and develop a slightly blistered surface, then remove and set aside.
Tip:
Before stir-frying green beans, it's crucial to blanch them. If not thoroughly cooked, the saponins in the beans can cause strong digestive irritation, and they also contain hemagglutinin, which promotes blood clotting. Additionally, beans contain nitrites and trypsin, which can lead to food poisoning if digested in the intestines. To prevent these issues, it's essential to blanch the green beans before stir-frying.
Leave a small amount of oil in the bottom of the pan, then add the minced meat. Stir-fry over high heat to evaporate the moisture from the minced meat, then reduce the heat to low and continue stir-frying until the minced meat becomes fragrant.
After the minced meat is fragrant, add the minced garlic and stir-fry together. Then, add the doubanjiang, dried chili peppers, and Sichuan peppercorns. Stir-fry until the sauce becomes aromatic and you can smell the spiciness of the chili peppers and the numbing flavor of the Sichuan peppercorns.
After everything is fragrant, add the fried green beans back into the pan. Season with a suitable amount of salt and chicken bouillon. Stir-fry over high heat until everything is well mixed, then remove from heat.
