Chinese Rice Noodles Recipe
Chinese rice noodles are a traditional Chinese snack known for their distinctive flavor. Made from rice, they are long and cylindrical with a round cross-section, boasting a clean white color and a resilient texture. Typically, they are briefly boiled in hot water, then transferred to meat broth where they are mixed with various ingredients and seasonings before being served hot. They are similar to vermicelli but offer a different mouthfeel.

- 200g rice noodles
DIRECTIONS
Prepare the Ingredients:
Soak the glass noodles and wood ear mushrooms in cold water until softened.
Prepare the Vegetables:
Wash and chop the tomato, wash the baby bok choy, and set aside the fried tofu and vegetarian meatballs.
Cook the Tofu:
Add water to a pot and bring it to a boil. Add the fried tofu and cook for 2-3 minutes.
Make the Soup Base:
Add the chopped tomato to the pot. Once the water starts boiling again, season with pepper powder to create the soup base.
Cook the Noodles:
After the soup base is ready, add the soaked glass noodles and bring the water back to a boil.
Add the Meatballs:
Once the water is boiling, reduce to medium-low heat and add the vegetarian meatballs.
Add the Bok Choy:
Add the baby bok choy and cook until all the ingredients are fully cooked.
Serve:
Once everything is cooked, transfer the noodles and soup to a bowl. Your delicious glass noodle soup is ready to enjoy!
