Clear Broth Hot Pot
Clear broth hot pot is a traditional Chinese dish known for its light and savory soup base. Unlike spicy hot pot, clear broth hot pot emphasizes the natural flavors of its ingredients, making it a healthier and milder option. The broth is typically made by simmering pork, chicken, or beef bones with green onions and ginger, creating a refreshing and delicious base.

INGREDIENTS
- 1 pork shank bone, chopped into pieces
DIRECTIONS
Cut 1.8 ounces of green onions into sections, slice 0.7 ounces of fresh ginger, cut 0.7 ounces of dried chili peppers into segments, chop 1 pork shank bone into pieces.
Place the pork shank bone pieces in a pot and add enough cold water to cover them completely.
Tip:
You can also add a small amount of cooking wine to reduce any gaminess.
Bring the water to a boil over high heat. Once boiling, continue to cook for 2-3 minutes to remove impurities. Skim off any foam that forms on the surface.
Add the chopped dried chili peppers, green onion sections, and ginger slices to the pot.
Tip:
If you don't like spicy food, you can omit the dried chili peppers.
Cover the pot with a lid and reduce to medium heat. Let it cook for 30 minutes.
Tips:
During cooking, skim off any foam that forms to keep the broth clear.
If time and water levels permit, you can reduce the heat to low and simmer for an additional 30 minutes or more for a richer flavor.
After simmering, add 2 teaspoons of salt and the rinsed goji berries.
Tip:
If there is no goji berries, you can choose not to add them, and if you like white pepper powder, you can also add it in moderation.
Stir well to combine. Your hot pot broth is now ready.
Pour the prepared broth into a hot pot and keep it at a medium heat.
Prepare various hot pot ingredients such as chinese cabbage, enoki mushrooms, fish balls, and sausages. Cook these ingredients in the broth until done and enjoy.
Tips:
Keep a pot of boiling water nearby to add to the hot pot if the broth reduces too much.Adjust the seasoning to taste if needed.
