Mince the garlic, finely chop the ginger, and chop the scallions. Set aside.
Prepare Chicken Wings
Use a toothpick to poke several small holes on both sides of each chicken wing for better flavor absorption.
Marinate Chicken Wings
Place chicken wings in a bowl. Add minced garlic, chopped ginger, and scallions. Pour in 3 tablespoons of light soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of dark soy sauce, and 1/2 teaspoon of salt. Mix well and marinate for 15 minutes.

Fry the Chicken Wings
Heat oil in a pan. Once hot, swirl the oil to coat the bottom evenly.
