DIRECTIONS
Prepare your ingredients. Cut the mature hen into large pieces and wash thoroughly.
Tips:
① To prevent excess fat, try to remove the fatty parts of the chicken as much as possible.
② Discard unnecessary parts of the chicken, including red offal such as the liver, lungs, and heart. Clip off the nails on the chicken's feet; remove the beak area located between the upper part of the mouth and eyes, as well as the chicken's rear end.
③ Thoroughly clean the mature hen, making sure to remove blood and impurities, resulting in a clearer soup.
Slice the ginger and cut the scallions into sections. Clean the cordyceps flowers, jujube, and goji berries thoroughly and set them aside for later use.
Tips:
Dried cordyceps flowers should generally be soaked in water for about half an hour. Be careful not to soak them too long, as it may affect their quality.
Add enough cold water into the pot to cover the old hen, add ginger, then turn on high heat.
Tips:
Try to add enough water all at once, to prevent adding water halfway through which could affect the flavor of the soup; if you must add water, please use hot water.
Bring it to a boil over high heat. After the water boils, use a spoon to skim off the froth from the soup surface, then cover the pot and simmer over low heat.
Simmer over low heat for about 1.5 hours. Uncover and add Cordyceps flower and jujube, then continue to stew for 30 minutes. 5 minutes before removing from the heat, add goji berries and salt. Stir lightly and pour into soup bowls. Sprinkle some scallions on top and it's ready to serve.
Tips:
① Don't add the Cordyceps flowers too early to the pot. If you do it too soon, they will lose some of their nutritional value and benefits.
② It's best to add the salt and goji berries just before you're ready to serve the dish. Otherwise, the goji berries could become mushy and the texture of the chicken might be tough.
③ If you don't have chopped green onions, you can choose not to sprinkle them.
