Corn Pork Rib Soup

- 1.3 pounds pork ribs, cut into 1-inch pieces
DIRECTIONS
Prepare the Ingredients:
Cut 1.3 pounds of pork ribs into 1-inch pieces.
Cut 1.1 pounds of corn into chunks.
Cut 1 large carrot into chunks.
Slice 1 small piece of ginger.
Blanch the Pork Ribs:
In a pot, add enough water to cover the pork ribs.
Add the sliced ginger and 2 tablespoons of cooking wine to the pot.
Add the ribs to the pot.
Bring the water to a boil and let the ribs blanch until they turn white.
Remove the ribs and rinse them under cold water. Set aside.
Cook the Soup:
In a large pot or clay pot, add the blanched pork ribs, ginger slices, carrot chunks, and corn chunks.Fill the pot with 4-5 cups of water, enough to cover all the ingredients.
Cover the pot with a lid and bring to a boil. Then reduce the heat and simmer for 1.5 hours.
Season and Serve:
After 1.5 hours, add 2 teaspoons of salt and stir to combine.
Serve the soup hot, garnished with chopped green onions if desired.
