Prepare all the ingredients.
Clean the carp and make two cuts on both sides of the fish.
Drizzle with a little cooking wine.
Sprinkle with a small spoonful of salt.
Rub evenly and let it sit for 20 minutes.
Wash the cilantro thoroughly and soak it in clean water for later use.
Peel and wash the ginger, then slice it thinly.
Pat the carp dry with kitchen paper.
Finely chop the cilantro.
Rinse the tofu slightly and cut it into small pieces.
Heat oil in a pan.
Once the oil is hot, add the carp.
Fry until both sides are golden brown.
Add the sliced ginger.
Add some cooking wine.
Add some hot water.
Bring to a boil over high heat.
Cover the pan, reduce the heat to medium-low, and simmer for 15-20 minutes.
Add the tofu.
Cover the pan and continue to simmer for 10-15 minutes.
Add a small spoonful of salt.
Add some ground black pepper.
Add the cilantro, and it's ready to serve.
Transfer to serving bowls.
