Cut off the top of the pumpkin, scoop out the seeds, and carve out a portion of the pumpkin along the edges. Dice the removed pumpkin pieces and set aside.

Pumpkin has a subtly sweet flavor. For those who prefer a sweeter taste, adding pumpkin can enhance the aroma of the fried rice, bringing a touch of sweetness to the dish.
Prepare two eggs, beat them with a little water, and add a pinch of salt.

Adding water can make the eggs fry up fluffier, resulting in a light and tender texture.
Chop the scallions and set aside.
Beat the eggs, heat oil in a pan, pour the eggs into the pan, fry until cooked, then remove from the pan.
Tips:
When frying eggs, preheat the pan and oil well. Use a slightly wider amount of oil, adding about one-third more than usual. This helps the egg mixture spread quickly in the pan, reduces sticking, and maintains the tenderness of the eggs.
Add a little more oil to the pan, then add the pumpkin cubes and stir-fry until slightly softened.

Stir-frying until slightly softened means heating the ingredients until they lose their raw smell and are close to being fully cooked. Generally, this refers to about 80% cooked.
Pour sesame oil into the pan, use a spatula to loosen the rice grains, stir-fry until they become separated, then add the stir-fried pumpkin cubes and eggs.
