Egg Foo Young is a delicious Chinese dish that’s simple to make and uses basic ingredients. Today, I’m excited to share this tasty recipe with you.

INGREDIENTS
- 2 eggs
DIRECTIONS
Preparing all the ingredients: Start by taking out the 13 mussels (mytilus edulis).
Prepare the sauce: Take a clean bowl and mix together 1g of chopped scallions, 5ml light soy sauce, 5ml regular soy sauce, 5g cornstarch, and a suitable amount of warm water until well combined. Set aside for later use.
Separate the shells of the mytilus edulis, trim off any black fibrous material from the meat, then wash and drain the meat.
Prepare a bowl, crack 2 eggs into it, add 2g of chopped scallions, and 2g of salt. Mix well.
Add the prepared mytilus edulis to the bowl. Mix thoroughly.
Heat cooking oil in a pan. Once hot, pour in the egg mixture. Cover the pan with a lid and cook over medium-low heat until set.
Plate the Egg Foo Young and pour the prepared sauce over it. Now it's ready to serve.
