- 1 whole chicken (about 2 pounds)
DIRECTIONS
Prepare ingredients:
0.7 oz green onion (white part), cut into segments
0.7 oz ginger, sliced
Prepare Spice Bag:
Place the cardamom, nutmeg, tsao-ko, angelica dahurica, Sichuan peppercorns, cinnamon sticks, and fennel seeds into a muslin bag. Tie securely to form a spice bag.
Prepare Chicken:
Cut the whole chicken into pieces approximately 3 inches wide.
Stir-Fry Chicken:
Heat oil in a pot and add the chicken pieces, stirring until they change color.
Seasoning and Stir-frying:
Pour in 1 tablespoon cooking wine and 1 tablespoon light soy sauce. Add 1 tablespoon chili sauce and 1 tablespoon spare rib sauce. Stir-fry briefly.
Flavoring and Cooking:
Add 1 tablespoon dark soy sauce, 1 teaspoon salt, and 1/2 teaspoon sugar. Stir well. Add ginger slices, green onion segments, and 0.7 oz of red dates. Cover with a lid and simmer for 5 minutes.
Cook Broth:
Pour in enough water to cover the ingredients in the pot, add the spice bag, cover with a lid, and cook over medium heat for 20 minutes.
Season and Serve:
Add another teaspoon of salt, stir well.
Remove the spice bag and pour the broth into the hot pot. Use it to cook various delicious ingredients.
