Start by separating the egg whites from the yolks of the three eggs.
Add 40 grams of granulated sugar to the egg yolks.
Use a whisk to mix the egg yolks and sugar until well combined.
Next, add 25 grams of water and continue to mix until smooth.
Pour the mixture into a saucepan and heat over low heat, stirring continuously to prevent it from sticking to the bottom of the pan.
Tip:
Keep stirring constantly to avoid the egg mixture from burning.
Heat until the egg mixture thickens to a sticky consistency, as shown in the picture.
Cool the egg mixture by placing it in an ice bath.
Prepare 195 grams of heavy cream and whip it with a mixer on high speed for 2 minutes.
Continue whipping for an additional minute until the cream forms clear peaks and is smooth.
Fold one-third of the whipped cream into the egg mixture, mixing until well combined.
Add the remaining whipped cream and continue to fold until evenly mixed.
Ensure the mixture is smooth and free of lumps.
Pour the mixture into a prepared container.
Cover with plastic wrap and refrigerate for 3 hours.
After 3 hours, remove from the fridge, and your homemade ice cream is ready to enjoy.
