Jian Bing Guo Zi(煎饼果子)
Jianbing Guozi is a popular Chinese breakfast that originated in Tianjin, China. It features a crispy pancake base rolled with a variety of fillings like fried crackers, lettuce, and sausage. The result is a crunchy and delicious treat that's incredibly flavorful.

INGREDIENTS
- 50g buckwheat flour
- 2 hot dogs
- 100g all-purpose flour
- 100g lettuce
- 4 eggs
- Chopped green onions (to taste)
- Black sesame seeds (to taste)
DIRECTIONS
Prepare all ingredients: buckwheat flour, hot dogs, all-purpose flour, lettuce, eggs, salt, chili sauce, and water.
Mix 50g buckwheat flour with 100g all-purpose flour and a pinch of salt.
Add 310g water.
Stir until smooth and the batter has a thick, yogurt-like consistency.
Heat a non-stick skillet, lightly oil it, and pour in the batter, spreading it evenly with a spatula.
Once the batter sets, crack an egg onto it and scramble the egg.
Flip the pancake once the egg is mostly set.
When both sides are cooked, brush the surface with chili sauce.
Add the cleaned lettuce leaves and sliced ham onto the pancake.
Tip:
If you want to include crispy crackers, add them at this stage.
Roll up the pancake with the fillings. (Use the remaining batter to make 3-4 more pancakes in the same way.)
