Pigs Trotters Recipe
Pigs trotters are rich in collagen, offering a soft, chewy texture with a delightful bounce. Whether braised, stewed, or used in soups, they release an enticing aroma. This easy baked pigs trotters recipe is definitely worth a try!

INGREDIENTS
- 500g pigs trotters, cut into pieces
DIRECTIONS
First, prepare all the ingredients.
Soak the 500g pigs trotters in clean water and wash thoroughly.
Place the cleaned trotters in a pot with cold water, add 30g green onion segments, 20g ginger slices, and 2 tablespoons cooking wine. Bring to a boil and blanch, then remove and rinse.
In another pot, add the blanched pigs trotters, 2 star anise, 1 bay leaf, and 1 tablespoon Sichuan peppercorns.
Bring to a boil over high heat, then reduce to low and simmer for 90 minutes.
Tip:
Cooking the pigs trotters thoroughly beforehand makes them easier to roast and reduces baking time.
After cooking, remove the pigs trotters, rinse them, and arrange them neatly in a baking tray.
Pour 150g of barbecue sauce into a bowl.
Brush the barbecue sauce evenly over the pigs trotters.
Place in the oven and bake at 180°C (356°F) for 15 minutes.
Tip:
We prefer our baked pigs trotters to be a bit tender, so we bake them just once. If you like them crispier, you can bake them twice, for 15 minutes each time.
Once baked, sprinkle the pigs trotters with white sesame seeds and chopped scallions.
