DIRECTIONS
Prep the Potatoes:
Peel and cut the small potatoes into chunks. Soak them in water to prevent discoloration.
Prep the Aromatics:
Cut the green onions into sections and slice the ginger.
Prep the Ribs:
Cut the pork ribs into 2-inch pieces.
Blanch the Ribs:
Boil a pot of water. Add the pork ribs and blanch until they change color. Drain and rinse the ribs under cold water, then set aside.
Stir-fry the Ribs:
Heat a bit of oil in a pot. Add the ginger slices, star anise, and cinnamon stick. Stir-fry until fragrant.Add the pork ribs and stir-fry until they turn slightly golden.
Add Seasonings:
Pour in the cooking wine, light soy sauce, dark soy sauce, and rock sugar. Stir until the ribs are evenly coated and have a nice color.
Tip:
If you can't find dark soy sauce, you can substitute it with regular soy sauce. However, dark soy sauce adds a richer color to the dish.
Simmer the Ribs:
Add enough water to cover the ribs (about 2 cups). Bring to a boil, then cover the pot and reduce to a simmer. Cook for 30 minutes.
Add Potatoes:
Add the potato chunks and green onion sections to the pot. Cover and continue simmering for another 10 minutes, or until the potatoes are tender.
Finish Up:
