Roast Pig's Trotters
Today, I'm thrilled to share a super tasty recipe for roasted pig trotters! The skin is crispy, while the meat is tender and full of collagen. One bite brings an explosion of happiness! The recipe is simple and requires no special equipment, so come and give it a try!

INGREDIENTS
- 400g Pig Trotters
DIRECTIONS
Clean the Pig Trotters:
Wash 400g of pig trotters and cut them into chunks. Add 3 slices of ginger and 2 tablespoons of cooking wine, then blanch them in water.
Tip:
You can ask the seller to clean and cut the pig trotters for you. Blanching helps remove any unpleasant odor and improves the texture of the trotters.
Rinse the Pig Trotters:
Once the pig trotters come to a boil, drain the dirty water and rinse them thoroughly.
Caramelize the Sugar:
In a pan, add 15ml of cooking oil and 10g of rock sugar. Heat over low heat until the sugar melts.
Tip:
Be careful with the heat when caramelizing the sugar; too high a temperature can burn it.
Coat the Pig Trotters:
Add the pig trotters to the pan and stir to evenly coat them with the caramelized sugar.
Add Seasonings and Simmer:
Once the pig trotters are fragrant, add 1 tablespoon of light soy sauce, 2 tablespoons of dark soy sauce, 1.5g of Sichuan peppercorns, 2 star anise, and 10g of salt. Pour in enough boiling water to cover the trotters. Transfer to a cast-iron pot or Dutch oven and simmer on low heat for about 1 hour, until the trotters are tender enough to be easily pierced with chopsticks.
Prepare for Roasting:
Remove the cooked pig trotters and let them dry. Place them on a baking tray, brush with a layer of cooking oil, and sprinkle with salt, cumin, and chili powder. Transfer to a preheated oven set to 150°C (300°F) and roast for 30 minutes.
Tip:
Make sure to preheat the oven. Flip the pig trotters halfway through roasting.
