Roasted Pig's Trotters

Prepare Ingredients:
Gather all the necessary ingredients.
Blanch the Pig Trotters:
Place 400g of pig trotters in cold water with half a green onion, 3 slices of ginger, and cooking wine to remove odor.
Tip:
Ask the vendor to cut the trotters into smaller pieces.
Rinse:
After blanching, drain and rinse the trotters with hot water to remove any blood foam.
Caramelize Sugar:
Heat some oil in a pot and add 10g of rock sugar to make caramel.
Tip:
Keep the heat low to avoid burning the sugar. As it melts, it will gradually change color. When it turns light brown and bubbles slightly, it's ready.
Add Trotters:
Once the sugar is ready, add the trotters, then stir in 2 tablespoons of soy sauce, 2 tablespoons of oyster sauce, and 1 tablespoon of light soy sauce.
Add Water:
Pour in enough water to cover the trotters.
Add Aromatics:
Add the remaining half of the green onion, 3 slices of ginger, 2 star anise, 8 Sichuan peppercorns, 1 piece of cinnamon, and 2 bay leaves.
Pressure Cook:
Transfer everything to a pressure cooker.
Cook:
Bring to pressure and cook for 30 minutes.
Air Fry:
Remove the trotters and place them in an air fryer. Cook at 180°C (356°F) for 30 minutes.
Serve:
Once cooked, plate the trotters for a delightful dish with crispy skin and tender meat.
