INGREDIENTS
- 10.5 ounces (300g) shrimp, deveined and butterflied
DIRECTIONS
Prepare the Ingredients:
Finely chop the green onion. Devein and butterfly the shrimp, then set them aside.
Marinate the Shrimp:
In a mixing bowl, combine the shrimp with 1/4 teaspoon salt, 1 teaspoon cooking wine, and a pinch of pepper. Mix well. Add 1 teaspoon cornstarch, mix again, then add another teaspoon of cornstarch, stirring until the shrimp are evenly coated. Let the shrimp marinate for 3 minutes.
Prepare the Egg Mixture:
Crack 3 eggs into a bowl. Add 1/2 teaspoon salt, 1 teaspoon light soy sauce, 1 teaspoon sesame oil, and a pinch of pepper. Beat the eggs until well mixed. Then, stir in the chopped green onion and continue beating until the mixture becomes frothy.
Cook the Shrimp:
Heat a suitable amount of oil in a pan. Once hot, add the shrimp and cook until they turn pink. Remove the shrimp from the pan.
Cook the Eggs and Combine:
Leave a small amount of oil in the pan and pour in the egg mixture. Cook until the eggs are partially set, then add the shrimp. Stir-fry until the eggs fully coat the shrimp. Serve and enjoy!
Tip:
Don’t overcook the eggs, as they won’t properly coat the shrimp if they are too firm.
