INGREDIENTS
- 150g (about 1/3 lb) yellow chives, cut into 2-inch pieces
- 200g (about 7 oz) beef tenderloin, sliced thin and cut into strips
DIRECTIONS
Prepare the Ingredients:
Start by slicing the yellow chives into 2-inch pieces. Cut the beef tenderloin into thin slices and then into strips. Slice the red chili pepper into rings and mince the ginger.
Marinate the Beef:
Place the beef strips in a bowl and add 1 teaspoon of cooking wine, 1 teaspoon of light soy sauce, and a pinch of white pepper. Mix well, then add a small amount of cornstarch and mix again. Let it marinate for 5 minutes.
Stir-Fry the Beef:
Heat a wok or large skillet over medium-high heat and add 1 tablespoon of oil. Once the oil is hot, add the minced ginger and stir-fry briefly until fragrant. Add the marinated beef strips and stir-fry until the beef changes color and is mostly cooked through.
Add Vegetables:
Add the sliced red chili pepper and stir-fry for a few seconds. Then, add the yellow chives and continue to stir-fry until the chives are just tender.
Season and Serve:
Add 1 teaspoon of salt, 1 tablespoon of light soy sauce, and a small dish of oyster sauce. Stir-fry until everything is evenly coated and heated through. Serve immediately and enjoy your stir-fried beef with yellow chives!
