  • 100g dried porcini mushrooms
  • 2 segments of large spring onion
  • 5g rock sugar
  • 4 slices of ginger

  • 1g star anise
  • 1g Sichuan peppercorns
  • 5 pieces bay leaves
  • 0.5g cinnamon
  • 2g ground black pepper
  • 30g cooking oil
  • 2 tablespoons cooking wine
  • 3 tablespoons soy sauce
  • 5g salt

DIRECTIONS

STEP 1

Prepare Ingredients: 100g dried porcini mushrooms, 30g dried shiitake mushrooms, 1000g half a free-range chicken.

Tip:

Since my family is small, I use half a chicken. If your family is larger, consider using a whole chicken.

STEP 2

Lift the chicken and scorch it over the fire to remove the surface fuzz.
